Domaine Pattes Loup - Chablis Vent d'Anges 2017
Thomas Pico discovered quite early a passion for viticulture, growing up surrounded by a father and grandfather winemaker. He studied viticulture and oenology in Beaune before returning to the family estate of Bois d'Yver in 2004. A year later, in 2005, Thomas took 8 hectares of vines from the family estate and began planting his own vines on the lieu-dit called "Pattes Loup", hence the name of the Domain.
The first vintage under the Domaine Pattes Loup is bottled in 2006. Today, Thomas exploits organically 25 hectares of vines in the village of Courgis. The estate was certified organic in 2009. Thomas works a meticulous approach, based on the respect of nature in the vineyard, with a thoughtful style of vinification, unique to Chablis. The whites are fermented and aged in a mixture of second-use oak barrels, demi-muids, concrete and steel depending on the cuvée and the vintage. The wines undergo a long and slow aging from 12 to 30 months before bottling.
Chablis Vent d'Ange comes from vineyards conducted organically on the lieux-dits called "Pattes Loup", "Les Menardes" and "Les Malentes". Fermentations occur with indigenous yeasts and the wine is aged in stainless steel and concrete vats. The bottles of Chablis Vent d'Ange spend a year in used oak barrels and two years in vats. The wine is shiny, textural, and pure - whatever different from traditional Chablis.
