A1710 is part of a resolutely modernist spirit which wants to combine the best of tradition and innovation for an authentic, refined, daring ... in short, exceptional result.
Its creation dates back to 1710, and owes its essence to the will of Jean Assier. Today it is his direct descendant, Yves Assier from Pompignan, who is at the origin of the new philosophy which animates the distillery and the Habitation du Simon (taken over by the brand). This distillery is also equipped with a fairly unique Charentais copper still, complete with 7 trays which bear the sweet name of "Belle Aline". In a marvelous setting amidst nature and the fields of canes, a small team is active in making each stage of the development of these great rums: from the field to bottling. Each operation is done by hand with the utmost care. We are here in hand-sewn! A separate distillery where craftsmanship is the watchword.
Cheval Bon Dieu is a blend of rums that have matured in wood between 18 and 36 months in French and American oak barrels. This cuvée is the very first aged rum from the A1710 distillery. This rum is served at 48 °, a perfect blend of finesse and power. Cheval Bondieu, Chouval Bondié for the intimate or Phasme for the most scientific. In Martinique culture, the Bondieu Horse is a legendary and emblematic animal. It is characterized by its lightness, its finesse as well as by its bark and wooden mantle. Characteristics reflecting this vintage.
The expressive and round nose welcomes us with fruity and sugarcane aromas before evolving towards scents of honey and gingerbread. On the palate, the attack is frank. We are swept away by fruit flavors such as blackcurrant, empyreumatic notes such as coffee, and vanilla. We find our beautiful sugar cane very present as in all of our A1710 cuvées. The finish takes us on woody notes and sweet spices. A balanced mature rum, both sweet and powerful, which gives a nice long finish. Cheval Bondieu is produced in 822 numbered copies.
