Domaine de Bellevues - David Ramnoux - Pineau des Charentes
Domaine de Bellevues is located in Mareuil, in Charente. It has been operated by David Ramnoux and his wife since 1997. They cultivate 8.5 hectares biodynamically and produce Pineau des Charentes, Cognac as well as a red wine classified as a Vin de Pays Charentais.
The Pineau des Charentes is a blend of Cognac with grape must: the mutage (fortifying). The grape must made of Ugni Blanc, Colombard and Sémillon comes from old plots that are over 50 years-old. When the must is added to Cognac brandy, alcoholic fermentation is stopped. After several years of aging, the cellar master proceeds to blend different years from these three grape varieties.
