LUCIEN AVIET - Vin Jaune - Cuvée de la Confrérie 2012
Le Caveau de Bacchus is based in Montigny, in the Jura. It was created in 1961 by Lucien Aviet, who was joined by his son Vincent in 1999. Lucien Aviet is still very involved, but now the reins are gradually taken over by his son. Made up of a small 6 hectares, the vineyard has a traditionalist tendency. The production is entirely harvested by hand and destemmed. The spontaneous fermentations take place in large and old Alsace foudres, very well maintained. The bottles have always been sealed with wax and are now part of the wine hallmark.
Lucien Aviet's Vin Jaune is made with Savagnin from several plots but whose terroir is made up of gray marls. The grapes are harvested manually and then immediately pressed. The wine is aged for 8 years in 228-litres barrels and demi-muids. Aging is oxidative.
