WATERFORD - Micro Cuvée - Lomhar - 50%
Waterford Distillery is located in the town of Waterford, in Ireland. The project was initiated by Mark Reynier, the man behind the renaissance of Islay’s Bruichladdich Single Malt Whisky, inspired by the world’s greatest winemakers. The distillery is a facility originally built by Diageo in 2004 and converted to distilling in 2015. Producing terroir-laden whiskies, the provenance of the barley, where and how it is cultivated, is key. He has sourced 86 Irish farms, including organic and biodynamically-run, growing barley on 19 distinct soils. With a pioneering digital logistical system, each farmer’s crop is harvested, stored, malted and distilled separately.
Lómhar came about at the request of CEO Mark Reynier for Ned, the Head Distiller, to create a “winter warmer”. This Micro Cuvée is something of a playful experiment: Ned assembled Lómhar predominantly from 10 distinct Single Farm Origin distillates, along with the first organic spirit distilled from the barley of 6 growers. All in all, it is made up of 11 main layers of spirit, 11 distinct Waterford Whiskies brought together. Also, Ned discovered they had a tiny amount leftover from the very first cuvée (Pilgrimage) and decided to add these very last, potent drops into Lómhar. Maturation lasted 3 years, 5 months and 27 days. The whisky matures in a combination of 36% first-fill American oak barrels, 25% Premium French Oak barrels, 21% vin doux naturel barrels and 18% American Virgin oak barrels. This extremely rareedition produced only 1,100 bottles.
