Waterford Distillery is located in the city of Waterford, Ireland . The project was initiated by Mark Reynier , the man behind the renaissance of Bruichladdich Islay Single Malt whisky, inspired by the world's greatest winemakers. The distillery is a facility originally built by Diageo in 2004 and converted into a distillery in 2015. The production of terroir whiskies places importance on the provenance of the barley, its location and its cultivation method. Mark Reynier works in collaboration with 86 Irish farms growing barley on 19 distinct soils , including organic and biodynamic barley. With a highly sophisticated digital logistics system, each farmer's crop is harvested, stored, malted and distilled separately.
Lómhar was born from Mark Reynier's (CEO) request to Ned (the head distiller) to create a whisky that would "warm you up for the winter". This Micro Cuvée is something of a playful experiment: Ned blended Lómhar mainly from from 10 distinct single-origin distillates , as well as the first organic spirit distilled from barley from 6 producers . In total, it is made up of 11 distinct Waterford whiskies brought together. Additionally, Ned discovered that there was still a small amount of the first vintage ( Pilgrimage ) and decided to add these last powerful drops to Lómhar. The maturation lasted 3 years, 5 months and 27 days. The whisky matures in a combination of 36% first-fill American oak casks, 25% premium French oak barriques, 21% natural sweet wine casks and 18% virgin American oak casks . This extremely Rare produced only 1,100 bottles.
