BIMBER - Ex Bourbon Cask - Small Batch n°2 - 52.20%
The Bimber Distillery is located in London , England . It was founded by whiskey lovers ( Ewelina Chruszczyk and Dairusz Plazewski ), with a mission to produce high quality Single Malt with character, using traditional methods rarely seen today. All barley is grown on one farm.
Fermentation then takes place for seven days in washbacks, large wooden vats created directly at Bimber, which has its own cooperage. Distillation takes place in a small copper pot still. The resulting distillate is then left to rest in barrels selected by hand and refurbished at the cooperage.
Bimber's first casks were filled on May 26, 2016 and released three years later in September 2019 - the limited release of 1,000 hand-numbered bottles sold out within 3 hours. Since 2020, Bimber has launched a wider range of new Single Malt whiskies.
This second edition of the Ex-Bourbon Cask expression from the Bimber distillery is a small series made with a blend of meticulously selected ex-Bourbon casks from American white oak . Only 252 bottles of a whiskey with a fruity and gourmet character, available in France.
