Domaine de la taille aux loups - Jacky Blot - Triple Zéro Rosé
The Domaine de La Taille aux Loups is located in Montlouis-sur-Loire , in the Loire Valley . It has existed since 1988, then under the management of a Bordeaux resident who farmed 7 hectares of vines belonging to André Chapeau and Clément Germain. In 1990, wine broker Jacky Blot took care of the vinification of the vintage and over the years, became attached to the Domaine. This is how, in 1992, he became its owner. In collaboration with Christophe Mesliand , they quickly built a great reputation. Jacky Blot attaches importance to respecting nature and the grapes: no pesticides, herbicides or chemical fertilizers. The estate has been certified in organic farming since 2012. The choice of traditional plowing and manual harvesting is highlighted, as soon as the grapes reach perfect maturity. He avoids interventions in the cellar and prefers traditional aging, without rushing the steps. Jacky Blot also owns the Domaine de la Butte in Bourgueil.
The name comes from the three “zeroes” of Jacky Blot:
• Zero chaptalization (addition of sugar).
• Zero draft liquor ; the very slow fermentation makes it possible to not let the yeasts consume all of the sugar naturally contained in the grapes. Bottles are drawn when there are 12 grams of sugar left to ferment.
• Zero expedition liquor ; at the time of disgorging, the level is carried out with identical wine instead of the sugar usually added. The maturity of the grapes allows disgorging without expedition liqueur in order to preserve all the purity of the wine.
