Sake is the most famous alcoholic drink in Japan. Brewed with special rice, it has many different styles and qualities depending on the brewing process, the ingredients used and the percentage of polishing of the rice.
Les Larmes du Levant is the first french established Sakagura which is entirely dedicated to brewing Sake. All of the raw materials (rice, kôji, yeasts) are coming from Japan. They only produce Junmai Sakes (pure sakes containing exclusively rice, water and yeasts).
Le Vent is made from Yamadanishiki rice polished at 50%. It combines the specific mellowness of the Yamadanishiki rice variety with a pinch of acidity, resulting in a more evanescent and subtle body.
