Waterford Distillery is located in the town of Waterford, in Ireland. The project was initiated by Mark Reynier, the man behind the renaissance of Islay’s Bruichladdich Single Malt Whisky, inspired by the world’s greatest winemakers. The distillery is a facility originally built by Diageo in 2004 and converted to distilling in 2015. Producing terroir-laden whiskies, the provenance of the barley, where and how it is cultivated, is key. He has sourced 86 Irish farms, including organic and biodynamically-run, growing barley on 19 distinct soils. With a pioneering digital logistical system, each farmer’s crop is harvested, stored, malted and distilled separately.
Biodynamic Luna 1.1 is made from biodynamic barley grown by Trevor Harris, John McDonnell and Alan Mooney at their respective farms in Coilltroim, Shalvantown, and Portgloriam. The barley was harvested in summer 2017 and then distilled between the 7th and the 12th of March 2018. The maturation lasted 3 years, 2 months and 1 day. The whisky barrels are assembled on the 19th of May 2021 before being bottled in September 2021 (35% first-fill American oak, 26% premium French oak, 22% Vin Doux Naturel and 17% Virgin American oak). 21,000 bottles were produced.
