Ninkasi was created in 1997 in Lyon, initiated by 3 young people who had recently graduated, with a simple idea: to implement the concept of American micro-breweries in France and start the craft beer movement. The company defends strong values of emergence, short circuits, and the mixing of professions, audiences and styles. Building on their brewing success, and with the idea that whisky is inseparable from beer, the distillery opened in 2014 and the first whiskies were released three years later. Indeed, the manufacture of these two products shares identical raw materials: malted barley, yeasts, water and fire. The Tarare site, in the Rhône, is perfect for making whisky, with the presence of excellent quality water.
The Single Malts are produced in small series, called Tracks, while promoting short circuits. Each bottle is the result of expertise in barley malts, acquired since their first brewing in 1997, and aging in wine barrels from the region's terroirs. Today, the cellar contains 112 aging barrels with different varieties of malts and barrels of various origins (Condrieu, Pouilly-Fuissé, Pinot Noir...).
This limited edition of 282 bottles is made from “pale” type malt. The whisky was put in new barrel of medium toast in June 2017. It was then refined in ex-barrels of Morgon, a red wine from Beaujolais. This Single Cask (#23) was bottled in August 2021.
