Chamarel is a distillery located in Mauritius . The road leading to La Rhumerie is lined with vast sugar cane plantations alongside pineapples and other tropical fruits. Mauritian architect Maurice Giraud has created a building that blends seamlessly into the spectacular surroundings. Wood, natural stone and water give a feeling of communion with nature, making the distillery one of the most beautiful factories in the world. Chamarel is one of the few distilleries still in operation to cultivate its own sugar cane; they are carefully selected and grown exclusively for the production of Chamarel Rums. The freshly harvested sugar cane is transferred within 4 hours to the distillery to preserve its freshness and aromas. The first pressed sugar cane juice will be filtered and then transported to 25 hectoliter stainless steel tanks to initiate alcoholic fermentation. Different means of distillation are available depending on the style of rum expected. The distilled rum is stored for at least 6 months in stainless steel tanks for a slow and gradual decrease in alcohol content. Barrels, casks, French oak, American oak, 18 months, 3 years, 6 years… a range of combinations allow the White Rum to obtain its aromas, roundness and color.
This edition is the basic expression of Chamarel XO , distilled in column stills (70%) and pot stills (30%) and aged for more than 8 years in oak barrels , which was then aged for an additional 2 years in oak barrels. Muscat .
