Château Henri Bonnaud - Red Palette 2016
Château Henri Bonnaud is located in Tholonet, in the appellation of Palette in Provence . The property belonged to Henri Bonnaud, the grandfather of winemaker Stéphane Spitzglous , and was then a polyculture farm. In 1996, the grandfather finally accepts that Stéphane takes over despite the difficulty of the work of a farmer. After several years of hard work to create his vineyard, he vinified his first vintage in 2004. From 2010, he made the choice of certified organic farming since 2013. His philosophy is also to extend this work in the cellar, respecting the material. first, by limiting inputs, preferring products of natural origin in order to preserve the specificity of each terroir and each grape variety. The estate extends over 14 hectares in AOC Palette. The other plots (about 10 hectares) are classified as Côtes de Provence Sainte-Victoire, Côtes de Provence and IGP Méditerranée.
The Palette Rouge 2016 is a blend of Mourvèdre, Grenache and old Carignan . The grapes are harvested manually then the harvest is destemmed and sorted again. Fermentation takes place in stainless steel vats, with daily punching down and pumping over for gentle extraction. The aging lasts 18 months in barrels and tuns .
