La Distillerie du Renard - Lune Bleue - Organic Gin-style wine eau-de-vie - 42%
The Renard Distillery is located in Gignac, in the heart of the Terrasses du Larzac vineyard in Languedoc . It was created in 2021 by Simon Tardieu. Its philosophy is to produce “natural” spirits, in symbiosis with the Natural Gnôles Manifesto . This movement defends the production of eaux-de-vie of high environmental quality against so-called artisanal distilleries according to European regulations that have become too flexible in the face of inputs. He distills in a 350 liter pot still, in copper and over a wood fire. Its ingredients are carefully selected and come from a local terroir conducted in organic farming . No input is added (sugar, sweetener, additives, etc.). He refuses to use the 96% superfine industrial alcohol imposed in the European specifications. Its alcohol bases come from a first distillation of wine or beer, allowing an alcohol concentration of around 30%. This brouilli is distilled again in order to separate the bad alcohols and keep the heart warm. The alcohol comes out of the still at about 70%. Finally, this alcohol is still distilled with the desired botanicals for the development of each recipe. Failure to use industrial alcohol implies non-eligibility for the designations “Gin” or “Pastis”.
Lune Bleue is made from a wine eau-de-vie from the region. Botanicals used are juniper berries, citrus, and licorice .
