Edinburgh Gin was established in 2010 by Alex Nicol in Edinburgh, Scotland . Today there are two production sites in the heart of the city. The West End Distillery is designed primarily for limited editions. The Leith Distillery, opened in 2016 in a former biscuit factory, has increased the production capacity of London Dry Gin. The Gin is made from two stills: a copper column named Caledonia, and a pot still named Flora. The team works in conjunction with Heriott Watt University, Scotland's only distilling academy. The choice of plants plays an essential role in the aromatic profile of the eau-de-vie: in addition to juniper berries, Alex Nicol uses the classic coriander seeds, lemon zest, angelica roots, but also heather, pine, and thistle – emblem of Scotland.
The Lemon & Jasmine edition is composed of juniper berries, lemon peel and jasmine flowers.
