SAB's - Gin - 46%
SAB's is a range of spirits produced by Alambic Bourguignon , in Beaune in Burgundy . It was created by Mathieu Sabbagh , whose idea was to revive original eaux-de-vie, planted on the Burgundian terroir as the winemaker does with his plots and his grapes. He has a traveling still , which moves around and distills on the very spot of the harvest. Thus, he can distill the best of Burgundy: Pinot Noir and Chardonnay in Beaune, Meursault, Gevrey-Chambertin or even Pommard. The three-vessel copper still captures the nuances and aromas of Burgundy grapes in the steam . The distiller tastes each batch as it comes out, and directly chooses the exact “cut” point of the distillation. The eaux-de-vie first rest in small Burgundy oak barrels of 228 liters and then mature for many years at room temperature (hot in summer and cold in winter). Bottling is done by hand in brown apothecary bottles sealed with a wax cap that will be colored differently depending on the product.
Gin is steam distilled. It comes from a maceration of juniper berries and 14 other aromatic plants in a French grain alcohol. Chardonnay and Pinot Noir brandies from Burgundy are added. The Gin rests for a minimum of 3 months in stainless steel vats.
