HBS Rum - Habitation Beauséjour - Varietal Selection - 55%
HBS rums are produced by Habitation Beauséjour , located in the north of Martinique . The distillery was created in 1883 on the site of a sugar refinery extending over 150 hectares. It was then known as Habitation Chambert. After several successions and due to the crisis in the sugar cane market, the farm had to convert to banana cultivation. In 2020, the heir to the estate, Arthur de Lucy de Fossarieu , decided to give it back its primary function: distillation. Sugar cane, replanted from 2007, is grown on 70 hectares (70% blue cane and 30% red and black cane). The harvest is manual and then pressed in one pass with a mill. Fermentation takes place in 3 stainless steel tanks and lasts between 24 and 72 hours. Distillation is carried out in a 9-tray column still called "L'Isabelle". The reduction is done with spring water for 4 months with stirring and rest. Half of the production is then transferred to stainless steel tanks for the production of white rum cuvées, and the other half to oak barrels for ageing.
Sélection Varietale is the first monovarietal cuvée from HBS, produced from blue cane (B69 566).
