The Nc'Nean Distillery is located in Drimnin on the west coast of the Highlands of Scotland . Nc'nean (pronounced Nook-knee-anne), is short for Neachneohain, an ancient Gaelic goddess, also known as Queen of the Spirits and fierce protector of nature. The idea to build a distillery on the grounds of the historic Drimnin Estate came to the Lewis family in 2012, some 10 years after they purchased and set about restoring the neglected property. By 2013 the Lewis family's plans to build a distillery in the historic farm buildings adjacent to Drimnin House were well advanced, with daughter Annabel Thomas leaving a job in London to personally manage the project as CEO of the new Drimnin Distillery. ltd. After two rounds of investment, including a government grant, the project was finally completed in March 2017. Its mission was to create a whiskey that could exist in harmony with the planet: they use organic Scottish barley from a distillery powered by renewable energy and recycle 99.97% of their waste.
This Huntress series is about discovery, innovation and the continuous search for unique flavors in whiskey making. The 2022 edition is the first to feature yeast essays. This Single Malt was created from 3 varieties of yeast , including one commonly used in the production of rum (anchor, fermentis and rum). It was distilled in August 2018 and aged in STR* red wine cask (61%) and ex-Bourbon cask (39%). It was bottled from March 17, 2022 and 4,447 bottles were produced.
