Domaine de la Chevalerie - Names of Birds 2019
The Domaine de la Chevalerie is located in Restigné , in the Bourgueil appellation, in the Loire Valley. The Chivalry is a long family story, which began nearly 400 years ago. From this line of winegrowers, the family inherited invaluable know-how and in-depth knowledge of each of the estate's plots. Today the adventure continues with Pierre Caslot and his children, two generations united to exploit this 38-hectare estate and perpetuate the family tradition. They cultivate Cabernet Franc vines, which are 30 to 70 years old on average. Anxious to preserve the essential balance of the ecosystem, the Caslots work according to organic (certified since 2008) and biodynamic ( certified since 2012) principles.
Noms d'Oiseaux is made from Cabernet Franc , from two emblematic parcels of the estate, each located at the two ends of the hillside overlooking the Loire. The name "Name of Birds" was chosen to alert to the urgency of respecting biodiversity . The wine is aged in concrete vats .
