CAOL ILA - The Distillers Edition - Double Matured in Moscatel Seasoned American Oak Casks - 43%
The Caol Ila distillery is on the island of Islay , Scotland . It is the largest single malt distillery on the island, in terms of capacity. The distillery was founded in 1846 near Port Askaig and is now part of the Diageo portfolio. A large part of its production is intended for various blends, including Johnnie Walker. Demand for volume led to the demolition of the old distillery in 1974 in favor of a new, larger site. From 2010, production almost doubled, from 3.5 million to 6.5 million liters per year. Caol Ila Single Malts were only available through independent bottlers until 2002 when Caol Ila 12 Year Old was released. The barley used is malted in Port Ellen, the stills are much larger than those of other Islay distilleries and are only half full to allow more contact between the alcohol vapor and the copper, this is why Caol Ila expressions are much less peated than other Islay Malts, with a subtle smoky character . Some non-peated versions are also occasionally produced.
The Distiller's Edition 2022 is aged for 12 years in oak barrels, then refined for 6 months in American oak barrels that have contained Moscatel-type wine .
Peaty (35 ppm)
