Irouléguy - DOMAINE ILARRIA - White 2021
Domaine Ilarria is located in Irouléguy in the Pyrénées-Atlantiques. It is a family property that has existed for several centuries. Ilarria is an old house in the village whose name evokes a site in the Landes (“Iri”: site, and “Larria”: Landes in Basque). The property has 30 hectares, including 10 hectares planted with vines : 2 hectares of Petit Manseng and Courbu in white, and 8 hectares in red (45% Tannat, 35% Cabernet Franc, 20% Cabernet Sauvignon). The vines of Domaine Ilarria are mainly planted on limestone hillsides located above the former priory of the monks, facing south and south-east. The soils are draining and the limestone rock allows the sun's heat to be stored and released gently. Wanting to preserve the tradition of the house and with respect for nature, the vines are worked according to the principles of organic farming, with certification .
The White is made from Petit Manseng and Petit Courbu . After a pellicular maceration at cool temperature of the Petit Manseng, the alcoholic fermentation begins with the native yeasts. Malolactic fermentation also occurs in stainless steel vats. The wine is then aged in stainless steel vats and aged barrels on its lees . This cuvée can be kept for 6 to 7 years after bottling.
