SAVANNA - White rum - Creol Straight - Batch CS.11.21 - Harvest 2021 - Limited edition 2022 - 68.7%
The Savanna Distillery is located on Reunion Island . It was designed and built by Emile Hugot between 1948 and 1950. At the time, located in Saint Paul, it was annexed to the sugar refinery of the same name. In 1982, the Distillerie de Savanna acquired a distillation workshop whose productions were only intended for the manufacture of light rum for export, following the signing of a major rum supply contract with a German customer leader in its market. This acquisition was, for Distillerie de Savanna, the driving force behind the development of its rum technology, which multiplied, from that year on, the diversification and quality of its productions. Today, the Savanna Distillery exports the majority of its rum production to professionals. Like many rum distilleries, the Distillerie de Savanna is equipped with a discontinuous fermentation process, also called a "mother tank" process, made up of 8 fermenters of 100 m 3 and all of its satellites. This discontinuity is synonymous with obtaining a high quality product.
Savanna Créol Straight is made from Bois-Rouge canes harvested in 2021. For this CS.11.21 batch, the traditional fermentation lasts 2 days, and the distillation is carried out in a copper column. The rum rested for 9 months in vats and contains 267.3 gr/hlpa. 6,500 bottles were produced.
