Château Thivin - Cuvée Zaccharie 2022
Château Thivin is located in Mont-Brouilly , in Beaujolais . It belongs to the Geoffray family which has been producing wines for 6 generations. Zaccharie and Marguerite Geoffray purchased Château Thivin and its two hectares of vines around the estate on June 8, 1877. Each generation succeeding them brought new plots of land to the construction of the estate and evolved the cultivation and winemaking methods. The estate's vines are located mainly in the Crus Côte de Brouilly and Brouilly, but the family also produces white, rosé and sparkling Beaujolais vintages. The family is constantly seeking to optimize cultivation practices, to ensure a perfect balance of the vineyard ecosystem with healthy vines and grapes of optimal quality.
Cuvée Zaccharie is made from Gamay Noir with white juice, from 50-year-old vines. The harvest comes from an entirely manual harvest, vinification is done by gravity. Maceration, partially in whole bunches, lasts 13 to 15 days and is followed by gentle pressing. A tenth of the aging takes place in Burgundian pieces and the rest in pieces aged 1 to 5 years. Aging lasts 10 months in oak barrels .
