Château Combel la Serre - At the Cherry Tree 2022
Château Combel la Serre is located in the Cahors region in the Lot, in the South-West . It was founded in 1998 by Jean-Pierre and Martine Ilbert . Jean-Pierre worked in a cooperative winery, which he decided to leave to settle on the plot of Combel where they live and which is covered with vines. La Serre is the name of the plot opposite where the agricultural buildings are located. In the early years, they sold the wine "in bulk" by the hectolitre in order to begin the investments necessary for the operation: construction of a new winery, purchase of a vat room, winemaking equipment, etc. In 2003, when the son, Julien, officially settled with his parents, they took a turn and decided to sell their wine in bottles. Today, the estate covers 23 hectares, cultivated using certified organic farming .
Au Cerisier is made entirely from Côt Noir (Malbec). The grapes come from a single plot of red clay on a limestone base located at an altitude of 350 meters on the Causse, at a place called "Rassiels". The vinification is traditional and the aging lasts about 14 months in cement vats .
