Maison Kalder - Rue des 4 Cider - Brut 2021
Maison Kalder is a cider estate located in Normandy . It is run by Alexandre Sidorenko , who holds a National Diploma in Oenology from the University of Bordeaux. The estate covers 11 hectares and is composed exclusively of high-stemmed trees (known as open-air trees), with a density of 1,000 trees, including 700 apple trees and 300 pear trees. Heirloom and late-ripening varieties are planted on a schist hillside facing due east, at an altitude of 200 meters. Production is carried out according to organic and biodynamic practices .
Only second-season fruit (November/December) is harvested. No fruit is purchased from outside. The pears are ripened in the grass, on the ground, for between 10 days and a month, while the apples are stored in sheltered pallox for between 2 and 6 weeks. Vinification is carried out without any addition of sulfur or exogenous yeasts. The juices are neither filtered nor fined.
Rue des 4 Brut cider is made from around ten late November varieties: Douce Coetligné, Douce Moen, Rouget de Dol, Bedan, Binet Rouge, Marie Ménard, Kermerien, Fréquin Rouge, Domaine, and Petit Jaune. It's ideal with roast pork, leek and Maroilles tart, and frangipane desserts.
