It is out of love for the vine and wine that the Thill family settled in the Côtes du Jura in 2009. It operates 5.20 hectares of old vines in the town of Gevingey, in South Revermont. The grape variety is made up of 3.15 hectares of Chardonnay, 1 hectare of Savagnin blanc, 60 ares of Poulsard and 35 ares of Pinot noir.
On tasting, the color is pale yellow. The nose is fine, airy, with subtle notes of honey, citrus zest and nuts. The palate is slender, straight, energetic, with a dense and mineral substance, between "rock water" and "pebble juice". The finish has a big, almost tannic chew marked by the lemon peel in its entirety.
This wine goes wonderfully with Asian cuisine, fish in sauces and foie gras.
