DIPTYQUE - Red - Bio DE LA CHEVALERIE 2016
A superb wine from vines of 35 on average cultivated according to the principles of biodynamics on a soil of sands and sandy clays. The harvest is manual and the fermentation takes place using native yeasts. Aging is done in concrete vats for 6 to 8 months.
We have a tasty nose with ripe red fruits and the typical vegetal notes of Cabernet Franc. Fresh and crunchy on the palate, offering good texture; we can feel the grapes have good maturity and a fresh finish. To be enjoyed over the next 5 to 7 years with poultry, cold meats, cheese ...
