The Bijito sake is developed by Kizakura company, founded in 1925 in accordance with traditional methods. It is the first factory in Japan to have a brewery of sake and craft beer.
For this high quality sake, 50% of the "Yamada Nishiki" rice grains have been polished and then brewed with Kyoto's famous "Fushimizu" water. The attack on the palate is first marked by the smell of a dry sake then reveals aromas of pear, apple and melon with rice umami.
