Domaine de la taille aux loups - Jacky Blot - Triple Zéro
Domaine de La Taille aux Loups is located in Montlouis-sur-Loire, in the Loire Valley. It exists since 1988, then under the management of a Bordelais who rented 7 hectares of vines belonging to André Chapeau and Clément Germain. In 1990, the wine broker Jacky Blot took care of the vinification of the vintage and over the years became attached to the Domaine. Thus, in 1992, he became the owner. In collaboration with Christophe Mesliand, they quickly forged a good reputation. Jacky Blot attaches importance to respecting nature and the grapes: no pesticides, herbicides or chemical fertilizers. The estate has been certified in organic farming since 2012. The choice of traditional ploughing and manual harvesting is emphasised, as soon as the grapes reach perfect maturity. He avoids operations in the cellar and prefers traditional aging, without rushing through the stages. Jacky Blot also owns the Domaine de la Butte in Bourgueil.
The Chenin Blanc grapes used to make Triple Zero are grapes whose juice is much richer than the juices usually used to produce sparkling wine. The first fermentation takes place in small barrels and the freshness of the cellar allows very slow fermentation. The wine is fed on its lees for several months in an environment saturated with carbon dioxide, which avoids the use of sulphites.
The name comes from the three "zeros" of Jacky Blot:
