Domaine ABBATUCCI - Empire - Blanc Effervescent 2015
Located South of Corsica, in the heart of the Taravo Valley and at an altitude of about 100 meters, Domaine Abbatucci is one of the oldest vineyards on the island. Composed mainly of iconic varieties such as Vermentino, Sciacarello or Nielluccio, the 20-hectare estate is home to a unique collection of 18 varieties of endemic varieties that contribute to the preservation of the island’s wine heritage.
The vineyard and vinification techniques are in line with the principles of biodynamics since 2000, with, among other things, only manual harvesting and the use of indigenous yeasts.
Cuvée Empire is an Extra Brut sparkling wine made from Barbarossa, and grown on granite arenas exposed to the North West. Jean-Charles Abbatucci works in biodynamy with an influence on phytotherapy practices: horse plowing and management of winter weeding with his flock of sheep. The grapes harvested by hand are then meticulously sorted and put into direct pressing in whole bunches. Alcoholic fermentation takes place in 1,200 litres-barrels. The aging lasts 4 months on fine lees and the effervescence is made according to the traditional method with an additional ageing on lees for 12 months.
Grape variety: 100% Barbarossa
