Domaine Jacques Tissot - Vin Jaune 1993
Domaine Jacques Tissot is located in the Jura region. Jacques Tissot created his estate in 1962 with a plot inherited from his father, and the first vintage of Vin Jaune was released in 1969, a legendary vintage. Son of a winegrower, and along with his wife Michelle, he knew how to highlight the characteristics so typical of Jura wines. His children, Philippe and Nathalie have joined them for a few years. The estate now covers 30 hectares, divided into AOC Arbois, Arbois-Pupillin and Côtes du Jura. Domaine Jacques Tissot is grown in sustainable agriculture: minimal use of phytosanitary products thanks to tillage and grassing of the plots. The vineyard, more natural, is reinvested by many insects, a sign of life and biodiversity.
This 1993 Vin Jaune is a blend of Savagnin grapes from different terroirs of the Domaine: En Sauvagny, En Mailloche and Les Bruyères. After the manual harvest, the grapes are pressed and then alcoholic and malolactic fermentation take place. Aging lasts 6 years in barrels, in ventilated attics causing the evaporation of around 38% of the Savagnin. During aging, the veil of yeast (flor) transforms the Savagnin into Vin Jaune.
