The Depaz distillery was born in the heart of La Montagne, located in Saint-Pierre not far from Mount Pelée, founded in 1651, under the will of Jacques Duparquet, the first governor of the island. As for the Depaz distillery, it pays tribute to Victor Depaz. His family worked in the production of rum, essential local players until in 1902, all perished under the awakening of Mount Pelée except for Victor, then a student in Bordeaux and since then an orphan. He will return 15 years after the eruption to revive the estate from its ashes, reconstructing the Perinelle Habitation from his childhood in the same way. It won't take long for the quality of the rums produced by the Depaz distillery to shine around the world, powered by sugar canes from rich volcanic soil and exceptionally pure water. Steeped in traditions, the distillery is one of the smallest in Martinique, whose heart is still powered by an old steam engine.
In autumn 2020, Depaz presents their latest cuvée and the Domaine's first white plot cuvée: the Papao cuvée. This first vintage, 2019, comes from the plot that bears the name Papao, harvested on the Caribbean coast in Saint Pierre within the volcanic terroir of Depaz. 100% blue canes with the B69 variety. Thanks to the orientation of this magnificent plot, which is perfectly exposed, the canes which grow there are full of sugar. This richness associated with a slow and fractionated reduction gives a rich and powerful rum on frank flavours of fresh sugar cane associated with notes of lime blossom and honey. Good tasting !
