Waterford Distillery is located in the town of Waterford, in Ireland. The project was initiated by Mark Reynier, the man behind the renaissance of Islay’s Bruichladdich Single Malt Whisky, inspired by the world’s greatest winemakers. The distillery is a facility originally built by Diageo in 2004 and converted to distilling in 2015. Producing terroir-laden whiskies, the provenance of the barley, where and how it is cultivated, is key. He has sourced 86 Irish farms, including organic and biodynamically-run, growing barley on 19 distinct soils. With a pioneering digital logistical system, each farmer’s crop is harvested, stored, malted and distilled separately.
Gaia 1.1 is Ireland’s first organic whisky. The barley comes from 6 organically grown farms by Jason Stanley, Paddy Tobin, Trevor Harris, John Mallick, Pat Booth and Alan Jackson. The barley was malted on July 14, 2016 and then sent to the distillery on July 28, 2016. The distillation, started on September 4, 2013 and completed on September 13, was carried out by four men: James Ellickson, Ian O'Brien, Padraic Power and Cian Dirrane. Maturation lasted 3 years, 9 months and 20 days. The whisky matures in a combination of 42% new American oak barrels, 23% Premium French oak barrels, 18% vin doux naturel barrels and 17% American Virgin oak barrels. 24,000 bottles were produced.
