Sake is the most famous alcoholic drink in Japan. Brewed with special rice, it has many different styles and qualities depending on the brewing process, the ingredients used and the percentage of polishing of the rice.
This Bijito Junmai Ginjo sake is produced by the Kizakura Brewery, founded in 1925. It benefits from an excellent water source via a local underground stream. It is made by fermenting rice, water and koji (a natural enzyme). The rice grains are 60% polished, a prerequisite for being in the Junmai Ginjo category, one of the highest levels of sake production.
