Domaine Roulot - Liqueur d'Abricot - 1L
Domaine Roulot is located in Meursault, on the Côte de Beaune in Burgundy. Owned by Jean-Marc Roulot and his sister, Michèle Javouhey Roulot, the estate produces wines as well as eaux-de-vie and fruit liqueurs. The distillation activity began in the middle of the 19th century: the copper still which is used in distillation today belonged to the grandfather and then father of Jean-Marc Roulot, who were then "traveling distillers". The tradition of distillation in the Roulot family, originally, was oriented around the marc de Bourgogne. Today, the range consists of two eaux-de-vie and a liqueur. The estate has been certified in organic farming since 2013, with non-certified biodynamic practices.
The Apricot liqueur is made from pitted apricots, then macerated in 96% neutral alcohol. The infusion of apricots lasts about 5-6 months. This maceration is then diluted with water to reach 25% alcohol, and sugar is added. Generally, a liqueur has a sugar level of 250 g/L but Roulot initially reduced this amount to 175 g/L and finally reaches 160 g/L today. This balance between the alcohol level and the sugar level has made this liqueur famous.
