Serafini & Vidotto - Bollicine di Prosecco Brut
Serafini & Vidotto is located in the Veneto region of Italy . In 1986, two school friends Francesco Serafini and Antonello Vidotto decided to unite their passion for high quality wines and ventured into the world of winemaking. From the beginning they chose to plant and make wines from international grape varieties and later began to work with native grape varieties such as Glera, Manzoni Bianco and Recantina. They have been using sustainable practices since 1990, with no organic certification.
This Prosecco Asolo is made from Glera grown exclusively in Nervesa della Battaglia. The fermentation of the base wine lasts 15 to 20 days at a controlled temperature of around 18°C to preserve the primary fruit aromas. Malolactic conversion is blocked for the same reason and to retain acidity. The second fermentation in vats ( Charmat method ) lasts about a month. After a short stay on the lees, the wine is filtered and bottled with a Brut dosage of less than 9 g/L.
