Domaine de la Butte - Jacky Blot - The Côteaux du Levant 2021
The Domaine de la Butte is located in Bourgueil , in the Loire Valley . It was taken over in 2002 by Jacky Blot , already owner of the Domaine de La Taille aux Loups in Montlouis-sur-Loire. He adapted to Bourgueil his cultivation and harvesting techniques already used for the production of his Chenins. On this terroir, he decided to separate the different plots of the estate, according to the Burgundian model. He farms 15 hectares, facing south and located on hillsides with unusual slopes and particular geology. He only cultivates Cabernet Franc there, the age of the vines being around 40 years and conducted in certified organic farming . Yields are limited in order to obtain more concentration, the harvest is manual and exclusively at perfect maturity, followed by three successive selections after picking. No oenological correction takes place in the cellar and fermentations occur without the addition of yeast.
Les Côteaux du Levant is a new parcel-based cuvée (since 2018), from the terroir that was originally blended in the “Haut de la Butte” cuvée. Fermentation takes place in wooden and concrete vats , and the vatting of Cabernet Franc lasts 1 month. The wine is aged in wooden vats of 60 hectoliters (1/3) and the rest in barrels of 2 to 3 wines.
