Domaine Olivier Guyot - Marsannay Rouge - Les Longeroies 2017
Domaine Olivier Guyot is located in Marsannay-la-Côte, in the Côte de Nuits in Burgundy . Since 1990, Olivier Guyot has managed the estate, which extends from Marsannay-la-Côte to Gevrey-Chambertin. Today, the estate is made up of many small plots spread over 15 hectares. Each plot varies according to the composition of the soil, its depth, its altitude and its exposure. Since 1998, the vines have been cultivated using sustainable cultivation , thus respecting the vine's immune defense system and intervening according to the risks incurred by the vineyard, only when necessary.
This Marsannay is made from Pinot Noir from the Les Longeroies climate. After the manual harvest, fermentation takes place in the traditional way in vats for 3 to 4 weeks. The wine is aged for 14 to 18 months in French oak barrels from the Troncet forest; 50% 3-year-old barrels, 30% one-wine barrels and 20% new barrels.
